Ktima Biblia ChoraA Structured Red for the Richer Side of the Table

Ktima Biblia Chora sits on the more structured end of the list.

It comes from eastern Macedonia, near Mount Pangeon, where Cabernet Sauvignon and Merlot are grown under cooler influences that help retain balance. The wine follows a familiar framework, but with a slightly firmer profile than most guests expect.

In the glass, it shows dark fruit—blackberry and plum—supported by oak. Time in barrel brings notes of cedar, spice, and a subtle touch of cocoa. The tannins are present and give the wine shape from start to finish.

This is not a wine that opens the table.

It tends to come in once the food has moved in that direction. Charcuterie, cured meats, and anything with more depth allow it to settle. Compared to lighter reds, it carries more weight and holds its position.

At CARTA, this is where the table becomes more defined.
